What Do You Know About Celiac Disease? Celiac disease is a genetic disorder affecting about one person in every 133 Americans. Both children and adults can have celiac disease and those who do are unable to eat foods containing gluten which is found in wheat and other grains. These gluten-containing grains set off an autoimmune reaction that damages the small intestine, causing illness. It is amazing the number of products that contain gluten--so many that most people do not even consider that they would or could have. And yet even the smallest amount can make a person who has this disease really ill. Celiac disease can be life-threatening if left untreated. Some of the symptoms associated with Celiac disease can be diarrhea, weight loss, abdominal pain and bloating, chronic fatigue and other gastrointestinal issues. There are support groups across the United States for people who either have or know someone who has this disease. And research continues, hoping one day soon to find a cure.
